Personal Story

I'm a baker. Even when I haven't been baking, I've always been a baker. It's part of who I am. So even though I've spent more than 20 years making my living in health care, the desire and the dream was to bake. I grew up in a house where there were almost always fresh-baked cookies in the cookie jar after school. Baking wasn't saved for holidays or special occasions, but was as much a part of the daily routine as was making dinner and washing the dishes. So it makes sense that my grandmother gave me a mixer as a going-away gift when I moved away to college, and that my 40th birthday present to myself was a trip to NYC to attend my first professional baking course.

I suppose most everyone has some type of creative outlet. For me it's all about yeast and flour. Baking is an ancient craft. It's a science and an art. It has also been a dream, and I am fortunate that it is also now my business.

Business Description

Toast and Jam is an artisan bakery and coffee house in Tucson, Arizona. Located in the beautiful Sabino Canyon area of Tucson, the bakery will serve as a gathering place for the local residents, as well as a destination where the hikers, joggers, and cyclists who frequent the nearby Sabino Canyon Recreation Area can meet.

With artisan breads, breakfast pastries, European-style desserts, and savory tarts baked daily, and a full line of coffee/espresso drinks, teas and juices, Toast and Jam is an ideal spot for neighbors and day trippers to stop and take a delicious break. As manager and barista, my partner Nik will be working out front, greeting and getting to know our neighbors and customers.

Toast and Jam is the happy product of 15 years of planning, dreaming and baking. There comes a time when the dream outgrows the home kitchen, and you just have to take the next big step.

What is the purpose of this loan?

With the $5000 from Kiva Zip, we plan to purchase two necessary pieces of equipment for the bakery.
Spiral Mixer...invaluable in the mixing of doughs for artisan breads. Approx cost is $3500. Although the bakery will offer a variety of pastries and tarts, a goal is to bake the best baguette and artisan bread in Tucson. This piece of equipment will bring us closer to that goal.
Reversible Sheeter...used for quickly and efficiently rolling croissant dough, puff pastry, and other doughs, this piece of equipment is essential for many of the breakfast pastries and tarts which Toast and Jam will offer. Approx cost $1500.
Without these two pieces of equipment, both the quantity and the quality of the product we produce would suffer.

This loan will allow them to continue their efforts in planning the beginning of their business by securing business equipment they need such as computer hardware and software as well as the additional training needed to suceed.
